my mom’s carrot relish

Grandma Mary’s Carrot Relish

1 Tbsp oil
1 tsp cumin seeds (optional)
2 cups grated carrots
1 medium onion, chopped
1 Tbsp chopped cilantro
1/2 inch piece ginger, grated
pinch of turmeric
1 green chilie, sliced (optional)
1 cup sour cream
salt to taste

Heat oil. Add cumin seed. About 10 seconds later, dd rest of the ingredients all at once. Stir and cook on high heat for a minute—NOT more. Cool. Add sour cream. Chill.
