Having forgotten to prep and chill cookie dough for our annual family Christmas tree trimming event, I was going for Plan B, cookies from a mix. But Jez, defender of traditions, insisted on sugar cookies and went googling for a recipe that didn’t require chilling. He found one, I tweaked it, and Sky helped. The result was wonderful–the lightest, easiest sugar cookies ever. Here it is.
Beat together 1 cup softened butter and 2 cups powdered sugar. Add 2 eggs, 2 tsp baking powder, 2 Tbsp milk, 1 tsp salt, 1 tsp vanilla, 1/2 tsp almond extract. Beat some more. Mix in 3 cups of flour. Drop (about a teaspoon full) onto greased cookie sheet, sprinkle with colored sugar if you like. Bake 375 degrees, about 8 minutes.
