brown rice & lentil soup

1 cup chopped onion
1/2 cup chopped celery
1/2 cup chopped parsley
1/2 cup olive oil
1 cup brown rice
2 cups whole red lentils
15 cups water
5 Tbsp chicken bouillon granules/powder
1 Tbsp cumin
1 Tbsp coriander
2 Tbsp minced garlic
4 Tbsp tomato paste
4-6 bay leaves
3-4 cinnamon sticks
2 anise star (optional)

Heat oil. Saute onions and celery. Add all the ingredients except lentils. Gently boil till rice is half-cooked. Add lentils and cook till soft. Serve with a dollop of sour cream (6-8 servings)

Note: I make mine in a pressure cooker. I cook the rice for 4 minutes, add the lentils and cook for another 2 minutes.
